Can you believe this ice-cream actually tastes better than it looks? Well it does. It is creamy, light and easy to whip up in no time at all.
Central to this recipe are egg yolks. Be sure to source pasture raised and organic eggs to benefit from the extraordinary nutrition contained in the humble egg yolk, a veritable powerhouse of fat soluble vitamins and quality fats.
This is best prepared a minimum of 4 hours prior to eating to give it a chance to set properly.
You will need organic of the following:
- 4 egg yolks
- 1 tsp local raw honey
- vanilla to taste
- optional ingredients: cacao, pureed berries, citrus juice or peel or anything else you can conceive
Beat the yolks with the honey and vanilla until thick and pale, then keep beating some more. Don’t stop until soft peaks form, you won’t believe how much volume can be created, so expect to be doing this for about 10 minutes. Stir through optional ingredients and freeze. The picture contains whole frozen blueberries but it is even better with pureed and sieved berries swirled through.
