Pumpkin soup is far from boring when made this way!
Using your home made chicken stock that has been made with vegetables such as garlic, onion, carrots, a chunk of pumpkin, celery, broccoli stalks, or whatever else you can think of, will add the most amazing flavour.
You will need:
- 1/2 very coloured pumpkin, these are usually the most sweet and flavoursome
- enough chicken stock to cover the pumpkin
- 1 heaped tbsp white miso
- 2 heaped tbsp cultured cream
Cook the pumpkin in the stock until soft, usually about 20-25 minutes then blitz until smooth. Add the miso and cream and combine thoroughly.
