Pumpkin Soup – Super Boosted for Gut Healing & GAPS

Pumpkin soup is far from boring when made this way!

Using your home made chicken stock that has been made with vegetables such as garlic, onion, carrots, a chunk of pumpkin, celery, broccoli stalks, or whatever else you can think of, will add the most amazing flavour.

You will need:

  • 1/2 very coloured pumpkin, these are usually the most sweet and flavoursome
  • enough chicken stock to cover the pumpkin
  • 1 heaped tbsp white miso
  • 2 heaped tbsp cultured cream

 

Cook the pumpkin in the stock until soft, usually about 20-25 minutes then blitz until smooth. Add the miso and cream and combine thoroughly.

This recipe couldn’t be easier and yet the result is truly delicious. Pour into mugs and enjoy the soothing satisfying taste of this healing food!
